Ingredients:
- 8 oz of krill meat, drained
- 2 ripe avocados
- 2 cups of mixed greens (such as lettuce, spinach, and arugula)
- 1/4 cup of chopped fresh cilantro
- 2 tablespoons of fresh lime juice
- 1 tablespoon of olive oil
- Salt and pepper, to taste
- Crushed tortilla chips (optional)
Directions:
- Cut the avocados in half, remove the pit, and peel the skin. Cut the avocado into small cubes.
- In a large bowl, combine the mixed greens, cilantro, lime juice, olive oil, and season with salt and pepper.
- Toss to combine.
- Add the krill meat and avocado cubes to the salad and gently toss to combine.
- Serve the salad on plates or bowls and top with crushed tortilla chips, if desired.
